The origin of this dessert bar is not very clear. Some online resources say this has been popular in the Philippines since the 1930’s. Why such name? Probably because the ingredients are too expensive that only the rich people can afford them. The walnuts alone are around Php 750/kilo nowadays arghhh. But it’s worth it! For someone like me who have sold my soul to fruitcakes and the likes of it, I convince myself it’s okay to splurge once in a while. It’s like Christmas in a cookie bar. It’s that heavenly.

Below is a recipe I got over the internet. I tried it already a couple of times and it’s just awesome. The recent batch I made are with raisins, instead of dates. Dates are not very popular with my toddler. Besides, raisins are cheaper and easier to find, making it the best alternative.

Food for the Gods Recipe 

What we need:

1 1/2 cups All purpose flour
1/2 tsp Baking powder
1/2 tsp Baking soda
1/4 tsp Salt
1 cup Butter
1 1/2 cups Dark brown sugar (less 2 tablespoons, optional)
1/2 cup White sugar (less 1 tablespoon, optional)
3 Eggs
1 cup Dates or raisins
1 cup Chopped walnuts

Note:
Toast the walnuts for better flavor.
Taking off a tablespoon of sugar is optional. I just find it too sweet for me hence the adjustment.

 

Here’s how:

Sift together flour, baking powder, baking soda and salt. Set aside.

Melt together butter and the two sugars. Cool first before proceeding with the next step.

Add the eggs one at a time.

Fold in dates/raisins and walnuts.

Add flour mixture to the batter, mix until just combined.

Pour batter over a lined 9×13 pan and bake at 350 F for 40 -45 mins or until done. Check your oven if it’s Fahrenheit or Celsius. Convert accordingly.

Cool completely before cutting into bars.
